Chicken Creole


Ingredients:

1 Chicken, cut up
1/4 Cup Flour
1 Tablespoon Chili Powder
2 Teaspoons Salt
1/2 Teaspoon Black Pepper
2 T Oil
1 Large Onion, chopped (1 cup)
1/2 Cup Green Pepper, chopped
1/2 Cup Red Pepper, chopped
1 Large Clove Garlic, crushed
1 (16 oz.) can Tomatoes, diced
1 Cup Chicken Broth
3/4 Cup Uncooked Rice, not instant


Instructions:


Coat chicken with mixture of flour, chili powder, salt and pepper. Brown on all sides in hot oil in large Dutch oven; Remove chicken from pan.

Add onion, peppers and garlic; saute until tender. Add chicken, tomatoes, and broth; bring to boil. Stir in the rice; reduce heat to low; cover and simmer 40 minutes, stirring occasionally, or until chicken and rice are tender and most of the liquid is absorbed.

Remove from heat; let set for 10 minutes.

Serve hot.
