Chicken Jambalaya


Ingredients


1 whole chicken

1 whole green or red bell pepper, diced

1 small yellow/white onion, diced

4 green onions, diced

2 T shortening

2 T flour

2 C chicken broth with seasonings (from the cooked chicken)

1 small can Tomatoe Paste

season to taste with salt, black pepper, garlic powder, cayenne pepper


In a large cooking pot, boil chicken, bell pepper, green onions, white/yellow onions, and seasonings until the chicken is done. Remove chicken from the broth and de-bone and dice it. Conserve the broth.

In a saucepan, melt the shortening, add flour to start making gravy, cooking over medium heat. Stirring occasionally, brown the flour until golden brown. Then add tomato paste with the chicken broth to the flour mixture, stirring well. Simmer on low heat until desired thickness is obtained, stirring occasionally. Add more seasonings as desired.

Serve the diced chicken over rice with the gravy drizzled on top for a delicious main course.
