Fried Rice

Great way to use your left-overs in the fridge!

Ingredients:

1/2 small onion, chopped

1 T shortening

2 eggs, beaten

small can sliced mushrooms

4 cups rice, (leftover or cooked fresh)

1/2 bell pepper (red/green), chopped or sliced thin

salt, pepper, garlic powder to taste

leftover (cooked) ham, chicken, bacon, sausage, steak, chopped into small chunks



Mix meat chunks, pepper, onions in small bowl and set aside.

Melt shortening in large saucepan, over medium heat and scramble the eggs until almost done. Then add the meat mixture and seasonings cooking until the onions are golden brown. Gradually add 3 large Tablespoons of cooked rice, stirring constantly. Repeat this process until all the rice is added.

Serve immediately. Add tossed salad, soup or sandwiches and soy sauce or sweet/sour sauce for a quick meal.

Serves 6

NOTE: If your mixture gets too dry while cooking and adding rice, just add a splash of chicken broth.
