Hot Chicken Salad



4 cups diced, cooked chicken breasts (boiled, stir-fried, or baked)

2 cups diced fresh celery

1/2-1 cup mayonnaise or salad dressing

2 cans of cream of chicken soup

2 cups of cooked rice (instant or regular)

1 cup of almonds, chopped

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon minced garlic

1 Tablespoon Lemon Juice

Buttered Bread Crumbs

Pepper Jack Cheese (or your favorite), grated

Preheat oven at 350 degrees.

Combine all of the ingredients except for the bread crumbs and grated cheese. Mix well in a large mixing bowl.

Pour mixture into ungreased rectangular baking dish. Top with the bread crumbs and grated cheese. Bake at 350 degrees 45-60 minutes.

Serve hot with Ranch, 1000 Island, Italian, French or whatever your favorite salad dressing is. May also add croutons.
