1 small onion, diced
1 egg, beaten
6 saltine crackers, crushed
2 Tablespoons of Worchestershire Sauce
1/2 cup ketchup or tomato sauce
Salt, pepper, garlic (powder or minced) to taste
In a large mixing bowl, mix the ground beef, onion, egg, crackers, Worchestershire, ketchup or tomato sauce with salt, pepper, garlic.
Mix well then form into a small loaf.
Place in a loaf pan that has been sprayed with Pam. Bake at 350 degrees in the oven for 45 minutes to 1 hour until completely cooked.
Add small amounts of water to it while cooking to keep it moist.
Use the pan drippings for making the gravy. Brown 2 Tablespoons of flour in 2 Tablespoons of shortening over medium heat. Then add the pan drippings plus enough hot water to make 1 cup of liquid to the flour mixture.
Stirring constantly until smooth and thick as desired. Add salt and pepper to taste. Remove from heat.
Serve:
When it is removed from the oven, take the meatloaf out of the pan and slice it when slightly cooled.
Serve hot meatloaf slices and gravy over rice or mashed potatoes.
Add corn or peas as a side dish. Serve with hot rolls. Serves 4.
