Sour Cream Meat Pies

Ingredients:

1 1/2 lbs lean ground beef

1 cup finely chopped mushrooms

1 large onion, finely chopped

3 Tablespoons butter

1 1/2 cup sour cream

1 1/2 teaspoon salt

1/4 teaspoon pepper

1 Tablespoon sugar

2 cups self-rising flour

1 egg, separated

1/2 c shortening

Saute ground beef, mushrooms, and onion in butter until lightly browned. Remove from heat. Stir in 1/2 cup sour cream, 1/2 teaspoon salt and pepper.

Mix flour, remaining salt and sugar in a bowl; cut in the shortening. Mix the egg yolk and the remaining sour cream in a separate bowl. Add to the flour mixture, mixing well.

Roll out the dough on a floured surface; cut circles out using the sour cream carton. Place 1 heaping teaspoon of the meat filling in the middle of each circle of pastry. Fold over and seal the edges. Mix the egg white with 1 Tablespoon of water and brush over the pies. Place on an ungreased baking sheet and bake in preheated 400 degree oven for 15-20 minutes.

May substitute chopped, cooked roast instead. Yield 1 1/2 dozen.
